After three years playing around, producing outstanding honeys, regaling our guests and visitors with them, tasting them, spreading them on French toast and pancakes, and all that wonderful morning jazz, I finally got my act together and I’m now ready to spread the wealth and the word around.
Its part of the sustainability outlook that has underlined both my wines and my olive oil.
Honey is the third essential Mediterranean joy, and one of Nature’s wonders that man has made his through a remarkable and gentle partnership. And our hard working partners are in dire straights.
In Sicily honey from Etna is very famous, as it should be, for the selfsame reasons the wine is: the stuff is exceptionally fine, never cloying and marvelously perfumed. Soon I’ll send you all more articulate details.
Today I have a license to jar and purvey it. I’m not looking to make money on this, though eventually it would be nice to break even! I want to pass a message, and there is no sweeter way I can think of.
